Dunkin to sell #GlutenFree muffins and doughnuts

Dunkin' Donuts is testing gluten-free cinnamon sugar donuts and blueberry muffins in select markets with plans to add the items to the menu by the end of this year. This is good news for those who live with gluten intolerance or sensitivity. And gluten-related food allergies, such as celiac disease, an autoimmune digestive disease that damages the small intestine and interferes with absorption of nutrients from food.

Gluten is a protein that is found in certain grains, including wheat, barley and rye. Gluten is key to the elastic texture of dough. Research, experimentation and creativity in home and commercial kitchens have come up with alternative flours to work around this issue with doughs.
